Milk has an average protein content of 3.5 percent. However, it contains different types of protein. Based on their properties and effects, milk proteins are divided into two main groups: caseins and whey proteins.

Caseins: At 80 percent, caseins make up the majority of milk. A distinction is made between micellar casein and calcium caseinate. Casein is produced by coagulation and sieving, for example when rennet is added. This is a mixture of the enzymes chymosin and pepsin, which is obtained from the abomasum of young ruminants and is needed to precipitate the milk protein during cheese production. The so-called curd is first pressed out and then usually dried on a roller dryer or extruder to produce casein powder.

Whey proteins: Whey proteins are often summarized under the term "whey". They make up around 20 percent of the whey proteins in milk and are extracted from the whey during cheese or casein production. A distinction is made between whey protein isolate (WPI) and whey protein concentrate (WPC).

What are milk proteins?

Milk protein powder , on the other hand, is a concentrate made from skimmed milk, which is obtained by ultrafiltration and then concentrated into a powder by evaporation and subsequent spray drying.

Not all proteins are the same. This does not only refer to the differences between vegetable and animal proteins. Whey and casein also differ in their effect as milk proteins and have many different applications.
